Rojizo Salami comes to us from North Country Charcuterie out of Columbus, Ohio. This Chorizo is an intriguing fusion of European traditions and flavors from the Southern hemisphere like Hot Paprika, Cayenne and Chipotle, all from North Market Spices in Columbus, Ohio. But don’t be afraid, the flavor is stronger than the heat! They use 100% Purebred Berkshire pork, it should be stored in a cool, dry place. Once opened and sliced, (if you didn’t eat it all) the cured meat should be rewrapped in the original butcher paper and refrigerated. They use natural hog casings and each chorizo is 5 oz. They are best served at room temperature and thinly sliced. When properly sliced, one link equals about 40-50 pieces. The white mold on the outside is edible, but can be peeled off prior to serving.
