Maytag Blue Cheese Dressing

    2 oz. (2/3 cup) Maytag blue cheese, crumbled
    ¼ cup vegetable oil (safflower, canola)
    1 teaspoon grated lemon zest
    1 tablespoon fresh lemon juice
    1 cup sour cream
    ½ teaspoon salt
    1-2 cloves garlic, minced

Process all ingredients in food processor with short pulses until mixed but still with lumps of cheese. Refrigerate at least 1 hour. Remove from refrigerator at least 30 minutes before using. Leftover dressing will keep in the refrigerator for 3-4 days.
