Gnocchi

1/2 hr and you have dinner!

    1 cup. ricotta cheese
    2 cups flour
    2 eggs
    2 Tbs. Parmesan cheese
    1 pinch salt

Mix together with hands until incorporated. Turn out on floured board and knead for 4-5 minutes. Allow to rest a few minutes.This allows the gluten to work. Remove and cut off a fist sized portion and roll and stretch gently to form a roll about as thick as your thumb. Cut pieces from roll that are about 1/2" long. Take the back of a fork and gently lift and press the gnocchi against the tines to help form the ridges on one side of the dumpling. This helps the sauce to cling to the pasta. Allow to dry a few minutes. Place in boiling, salted water and cook until the gnocchi rise to the top and are tender in the mouth. 4-7 min. Use your favorite sauce recipe.
