Pesto Genovese can be used on pasta and may be diluted with reserved pasta cooking water. Alternatively, it can be added to mayonnaise as a spread for panini; in soups such as minestrone; or blended with ricotta for layered lasagna. Lamb is superb when seasoned with pesto before roasting.
