Aged Gouda
Aged Gouda is a Dutch cheese ripened for a full 18 months to develop a nutty, caramel-like flavor. Made from pasteurized cow's milk, this is a cheese the Dutch like to keep for themselves. The texture is still firm and creamy and the taste is like Gouda with a hint of cheddar due to the aging. It is always a crowd pleaser.

Arico
Arico hails from the isle of Tenerife within the Canary Islands. The aroma announces a hint of what the interior has to offer. Arico is a firm goat cheese with a natural rind, glistening with smoky elegance and a wonderful ivory pate. The cheese is smooth with few tiny holes. The flavor lingers long on the palate with hints of wood, smoke and nuttiness. If you like smoked cheeses, you have to give this one a taste.

Asiago d'Allevo
This reserve stock, slow ripened Asiago is aged for a full year as opposed to regular Asiago d'Allevo's six months. Made in small batches from partially skimmed raw cow's milk, the additional aging gives this cheese a distinct but pleasant sharpness with hints of butterscotch. It has a texture that is firm enough to grate yet allows you to use it as a table cheese as well. Try it grated over risotto, polenta or pasta. It's also great in salads or by itself with a drop or two of Balsamic vinegar.

Banon
Banon is a small round cheese with a rind of natural mould. It is made from goat's milk during the summer and cow's milk in the winter. The cheese is very-well presented as it is wrapped in chestnut leaves after having been dipped in "eau-de-vie" (alcohol) to avoid bad mold.
The cheese is made from raw milk. It is ripened for 4 to 6 days before being wrapped in the chestnut leaves and then left to ripen again for 5 to 15 days. Banon is a mild soft cheese with a nutty flavor and a firm supple texture. As it ripens, the surface of the cheese takes on the color and the aroma of the leaf. The attractive presentation of Banon makes it perfect to use on a cheese board.

Bellavitano
This is a fabulous new cheese from Sartori in Wisconsin. It is based on Northern Italian farmstead cheeses and is creamy and rich with fruity notes. It's kind of a cross between Irish Cheddar, Parmesan and aged Provolone. This cheese is worth trying!

Belletoile Brie-70%
It took us awhile to choose any brie for the store, but this one was worth the wait. This is a triple cream brie from France made from whole cow's milk and cream, giving the cheese a 70% butterfat content. It's creamy and smooth at room temperature and cuts like butter. Serve it with your favorite white wine and crusty French bread. Decadence on a plate!
